I made pork shoulder in the crock pot tonight, and I have a TON left over. Usually I would make BBQ sandwiches with the leftovers, but I was hoping for something a little different. Anyone out in Pealand have a suggestion? |

I like shredded pork in tacos or on top of tostadas. You can freeze it too. |

I am making pork enchiladas tonight with leftover, frozen pork roast. I have done this before and they turn out excellent!
I add some dry taco seasoning, a little water and chopped cilantro to the pork. | |

Season it with a little chipotle pepper and stuff it in a baked sweet potato. Garnish with shredded cheese and chopped green onions. Yum! |

My go to when I don't know how to use leftover meat is baked mac & cheese with the meat chopped up in it. |

I added some lime zest, lime juice and cilantro and wrapped it in a flour tortilla with some shredded carrots and I know it sounds gross, but cottage cheese. It was fantastic.

My grandmother used to make pork pie. You grind up the pork, mix it up like meatloaf in a way with an egg and seasonings, then put it in a pie crust and bake it. You can put masked potatoes on top for a sort of shepherds pie if you want. |

I make chili with it. Use the shredded pork instead of ground beef. |

Stromboli
Which is a type of sandwich.
I use Pillsbury pizza dough in the can, or buy some unbaked dough from a local pizza place. Cut into squares, fill with meat, cheese, any sauce or gravy, pinch shut and bake until the dough is done. Yum! |

Great ideas...thanks! We made Cubans with the first round and they were yummy!!! I used Tyler Florence's recipe except I used dill pickles instead of sweet. Who puts sweet pickles on their Cubans anyway?

Sorry, I just saw this reply GeorgiaPea. I think Cubans are one of those things that everyone makes differently. I buy a soft white hoagie rolls (it's supposed to be cuban bread, but I can't find that where I live), then add pork roast, a slice of ham, a slice of some kind of white cheese - usually provolone, dill pickle slices and good spicy mustard. Then I smash them in the George Foreman grill (or panini maker if you have one). |
