I've got BBQ pulled pork in the crock pot now and it smells delicious! This is the first time I've made this recipe so hope it turns out ok.
We're going to have vegetables (leftover corn and fresh roasted brussel sprouts), potato chips, and fresh fruit to go with it.
I missed starting yesterday's thread about dinner but I made honey lime chicken, cilantro rice, and peppered mixed vegetables and made some lemon bars for a treat.
The chicken and rice were both new recipes as well and they were both big hits with everyone!

I put chicken breasts in the crockpot and poured salsa over the top. I don't have enough tortillas so I will make some rice to go with it

We are doing baked chicken and trying out these pioneer woman crash potatoes , hope they are yummy!
It is a rare cold rainy day here in Vegas, thinking after school the kiddos & I will make some cookies for dessert!  |

I make the PW crash potatoes ALL THE TIME and EVERYONE here LOVES them!
I do them a little different than the recipe, though.
I cut the red potatoes in quarters and boil those.
Then I drain the water and dump them all on a greased cookie sheet and mash them all down together.
Brush olive oil on the top and then I'll sprinkle salt and pepper on the top and bake them.
Sometimes I'll add shredded cheese and bacon bits occasionally as well. The kids ask for those probably once a week!

I spent my entire morning in the kitchen. I made chicken green chili enchiladas, Spanish rice and waffle turtle cookies. Then I packed it all up and took it to my niece who just had a baby last week. I have no idea what I'll have for dinner but I hope they enjoy theirs  |

We had a batch of mixed beans that cooked all day in the crockpot with a ham bone and some chopped up leftover ham mixed in. And a salad with lettuce, spinach, and random bits of produce left over in the fridge from the week, that could feasibly go in a salad. We baked brownies for dessert.
