i made 22 jars of jam yesterday but still have 2 flats of strawberries left. i have a strawberry board on pinterest and i am making a couple of things from that, but i need some recipes that i can freeze (breads, muffins, etc) and i am looking for your favorites.

right now i am roasting some strawberries in the oven and will be making a strawberry cream cheese cobbler. i made some popsicles yesterday too with the strawberries and coconut milk....fabulous...

so.........HELP!!

nomnompaleo.com posted a method for keeping your berries fresh for up to a week (I think it was posted on the last "Forky Friday".

It might be good to keep you from losing any to mold, etc. while you decide what to do with the rest of them!

I would freeze the rest and save for later. Wash, cap, and quarter and mash with some sugar (to taste) and freeze in freezer bags.

Freeze some. They are great in the winter when you are dreaming of summer!

i never thought to mash sugar THEN freeze them...i will do that with some of them for sure!! i will check out the paleo site too!! thanks

strawberry spinach salad

just spinach, strawberries and dressing...(serve on side)

1/2 cup oil
1/2 cup sugar
1/2 cup red vinegar
2 teaspoons sesame seeds
2 teaspoons poppy seeds
3 Tablespoons chopped onion

strawberry lemonaid concentrate

If you are short on freezer space puree the berries, put in freezer bags and freeze on a cookie sheet. you can use a chopstick to divide the bag in quarters as it is freezing flat. This will allow you to use a portion of the bag easily. I freeze it in 2 cup portions and divide in quarters. very easy to add to smoothies or thaw to top desserts with.

My in laws used to slice and lightly sugar strawberries and peaches. They would then use them on their cereal or put over pound cake or ice cream.

I throw them in green salads with pecans and Raspberry Peacan dressing. I had a great piece of pound cake from Starbucks last week. It was strawberry lemon. Haven't looked for a recipe but I will!
I just made some strawberry ice cream. I also saw a milkshake recipe for roasted strawberry milkshake...
