have you made them, start to finish, the night before? How did it go?

I always make them the day/night before. Go for it!

Yes, I've made them around 8 or 9 pm for dinner at 6 pm next day when I've had to work on the holidays. They are always requested and if I didn't make them night before we wouldn't be able to have them.

I always make them the day/night before taking them or serving them. In my opinion, the yolk mixture needs time for the flavors to blend together for proper flavor anyway. At the very, very least, I'd do everything but pipe the filling into the eggs the day before no matter how much time I had on the day of the event just so that it has that time.
