Curried Chicken Salad as published in Neurology Now magazine

I don't measure most of the ingredients, but I like to use:

Chicken breast, cubed
Sour Cream ( I use about 3 times the mayo as sour cream)
lemon juice - about 2 teaspoons
chopped almonds

that's about it, very simple, one of my favorites.

This one is super easy to make and delicious. I use the can chicken from Sams Club to make mine.

Chicken Salad

In a bowl put together:
Canned Chicken, drained
Green Onion, Sliced
Cheddar Cheese, Grated
Celery, Sliced
Cashews, Chopped
Salt and Pepper

Add as much or as little of each ingredient for your own personal taste. Great served on croissants.

Beyond the Grave Chicken Salad

Did y’all hear about the Coca-Cola heiress who got kicked out of the Junior League for making chicken salad with dark meat? It’s an urban legend in Atlanta, but every Southern woman worth her salt has a tried and true recipe for chicken salad. My personal favorite used to be served in the dearly departed tea room at Maas Bros. Department Store in St. Petersburg, Florida. I’ve tasted some great versions over the years, but none greater than the one I sampled at the wake of a friend’s father in Dalton, Georgia. It inspired the recipe for Beyond the Grave Chicken Salad in LITTLE BITTY LIES.

Beyond the Grave Chicken Salad Recipe

5 lbs. chicken breasts
2 quarts water
parsley sprigs
1 large onion, quartered
1 tsp. seasoned salt
2 chicken bouillion cubes

In large pot, bring water and seasoning to boil, add chicken, lower heat and simmer 40 min. Remove from heat, cool. Shred chicken and refrigerate.

1/2 cup bottled Italian salad dressing
1 cup Duke’s mayonnaise
1 Tbsp. white vinegar
1-1/2 tsp. celery seed
2 Tbsp. sugar
1/8 tsp. salt
dash paprika

Blend well together.

For salad:
Toss shredded chicken with one cup of dressing and let stand at least one hour to marinate.
Combine remaining dressing with:
1/2 cup sour cream
1 Tbsp. honey
Add to chicken and mix well. May add canned water chestnuts, blanched almonds or chopped pecans.

The book or the salad? Personally I loved both. I found her book at McKay's for $1 started reading that night, couldn't put it down, finished started the chicken salad and while it was marinating ran down to McKay's and got all of the other's they had. Almost passed out from delight from the chicken salad! So yummy! Finished Hissy Fit this morning, made the greens and grits, loved them too and just downloaded Summer Rental on my Nook!

She is so not my type of author and this isn't my usual genre but I am in LOVE with her books!

Here's what I throw together...

chicken breasts, cut in chunks/cubes
red grapes, halved
celery, chopped
(sometimes I add walnuts too)

Yum! I made chicken tacos tonight and I always save some chicken so I can make chicken salad for lunch the next day.

1/4 tsp curry powder~ it is seriously the secret ingredient

I make mine with half mayo, half non fat plain yogurt.

I then add:

1T brown mustard
1T chopped fresh rosemary
chopped green onion (1-2T)
handful chopped smoked almonds

I've made that Beyond the Grave salad before for some summer function and there
wasn't a bit left.

I think ROASTING the chicken gives the chicken salad a much better flavor, as roasting DOES bring out the flavors of most everything,, instead of boiling and all the flavor ends up in the water.

with a little olive oil, salt and pepper, just roast..

remove the skin, chop up, add mayo, seasonings, maybe celery,

that's how I like it

chopped chicken
celery minced
minced onion
splash of whipping cream to loosen mayo
walnuts /or pecans chopped
dryed cherries or cranberries
mix all and let set in the fridge for at least a few hours to it all mingles

I was at a luncheon on Friday and they served chicken salad from Sam's club with craisins and sliced almonds. It was seriously DELICIOUS! Not homemade, but in a pinch, I would buy it to feed a crowd!

But that is just of couse because I am a cheater

Now I have some great recipes to try instead!
