People seem to have very strong feelings on this subject. Some say that sweet potatoes have no part in holiday festivities. Others say that they're a vital and integral part of the meal--but just as they are, or with just a little "gussying up." And yet more of the general public says that they are only perfect topped with gooey and/or burnt marshmallows?

What is your stance on the whole sweet potato issue?

Must have sweet potatoes, but no marshmallows. Sweet potatoes, salt, butter, brown sugar, little maple syrup if the mood stikes, bake and eat. DDIL makes even better ones though. Some southern thing. On the stove top, in an iron skillet, don't know the details, but they are good!

DH and I love them so I make them. I steam them and then add butter, brown sugar, just a bit of cinnamon and then some mandarin orange slices and bake until bubbly - no marshmallows here. It wouldn't be Thanksgiving for us without them.

I like them made savory rather than sweet. But they are not a part of our Thanksgiving tradition.

Must have sweet potatoes, but don't like them super sweet or with marshmallows. I have a good recipe that uses orange juice and pecans when we're home for Thanksgiving and I'm cooking.

I really only like sweet potatoes baked, without anything else added.

I am pretty flexible when it comes to Thanksgiving/Christmas traditional dinner. I really only NEED turkey (tofurkey), mashed potatoes, and cranberries, and cheese sauce. Whether we have cauliflower, broccoli, peas, carrots, squash, sweet potatoes, heavenly salad, watergate salad, cinnamon buns, parker house rolls, stuffing, etc does not really matter too much to me. I like for the other passionate people in the family to pick their favourites. I will eat any of it!

Must have.

I make a sweet potato souffle - it is light and a good complement to the meal. It is a definite tradition in our family

Bruce's canned yams. Butter, brown sugar and covered with ooey-gooey marshmallows ... Just toasted a little on top. It's not Thanksgiving without them! you can also make it with fresh, cooked sweet potatoes, Bruce's are just easier!

cubfan1970-- care to share your polenta recipe?

I do a savory mashed sweet potato. It simply sweet potatoes with about a tablespoon of cream and some butter, salt, and pepper. Yum. It's the Cook's Illustrated recipe.

I love them baked with butter, salt and sour cream. Can not stand them sweetened in any way. So the marshmallow thing grosses me out. But I have a recipe for praline sweet potatoes that my extended family loves so I make it for them. I just choose to skip that part of the meal.

We don't have them. I remember when I was younger that sometimes a relative would bring a bowl of the canned sweet potatoes to family gatherings. But they were nasty and I don't think many ate them lol.

I like real sweet potatoes we just don't have them at our holiday dinners. Generally we have baked or mashed butternut squash for our orange veggie.

At work our dept head brings mashed sweet potatoes with a sweet topping to our office holiday party. They are AWESOME!

ETA-we put together an office cookbook a few years ago. Here is the sweet potato recipe.

1/4 tsp cinnamon
1/2 tsp. nutmeg
3/4 c. sugar
1 scant tsp. salt
2 1/2 lb. dry pack sweet potatoes*
1/4 lb. butter
2 c. milk

Mix spices together. Add potatoes, mash, then butter
and milk. Bake in hot oven until glazed on top.
(seems like it takes 1.5 hrs)

We have them, but I don't always care for them. I like them mashed, casserole style with brown sugar and stuff. But at FIL's house, they cook them whole, in some sort of syrup. I'm not sure what. Ick.

ETA: I just saw the other thread, about candied yams. That's probably close to what they make. I don't care for them that way.

That's me. We eat baked sweet potatoes all the time -- at least once or twice a week. But not at Thanksgiving.

Although we do have a butternut squash pie.

CMHS here you go: - Sweet Potato Polenta

4 - 5 sweet potatoes, peeled and cut into small cubes
Maple syrup
1 1/3 cups heavy whipping cream
2 tbsp butter
1/4 cup instant polenta

Preheat oven to 350

Place potatoes in a baking dish (lightly sprayed with non-stick spray) and coat with maple syrup. Don't be stingy with the syrup.

Cover with foil and bake at 350 for about 30 - 45 minutes. Cubes need to be very tender.

Once cooked thru, place potato cubes in food processor and process until smooth.

Heat the cream and butter over medium head. when the cream begins to simmer, slowly whisk in the polenta. Continue stirring for about 7 or 8 minutes. Mix in the pureed sweet potatoes until completely incorporated and smooth.

So.....not very heart healthy but they are SOOOOO good.

I don't make them if we're having Thanksgiving just as a family because I'm the only one who will eat them.

They were always a staple on the table for our family Thanksgivings growing up. With toasted marshmallows on top. One year, my youngest sister made them and forgot about them under the broiler. FIRE IN THE OVEN!!! LOL We almost wet ourselves laughing over that. Good times.. good times...

When we have company here for Thanksgiving, someone always brings sweet potatoes.

My favorite Thanksgiving dish is my mom's sweet potato casserole with marshmellows on top. Yummy! She even makes a seperate dish for me so that I can have plenty of leftovers. Can't wait to eat it tomorrow.

I absolutely hate sweet potatoes...I've tried them baked, fried, steamed...I really want to like them and I can't.

However, my aunt makes the most amazing, unhealthy sweet potato casserole. It's some kind of sweet, mashed combination of potatoes and pecans and maple syrup (I think I taste it in there) and I don't know what else...It is so unhealthy that I refuse to ask for the recipe. I eat a tablespoon of it every year at Thanksgiving, savor each little bite as it hits my thighs and look forward to the next year!

The best way to eat sweet potatoes - sliced and cooked on the cooktop with butter, adding apple slices cinnamon, and some apple juice, then cooking down the apple juice. Yummy. Good with some roasted pecans mixed in, too.

I don't like sweet potatoes and we've tried them every which way. However, this year dh made sweet potato gnocchi (w/browned butter sage sauce) and it was great so that will probably be our new go-to sweet potato dish.

Here is how we do them. Peel and slice into thick slices. Place in saute pan with butter and small amount (1T or less) of brown sugar. Place a couple of unpeeled orange slices with it. Cover and saute. Flip everything after about 10 minutes. Cook until they are soft.

I do like to have sweet potatoes for Thanksgiving, but try to find a new recipe every year. This year, I'm trying the Tyler Florence recipe that was posted here recently, and also adding in the Grand Marnier that a brilliant pea suggested. In fact, I'm cooking them right now to reheat tomorrow.

sweet potato yes, marshmallows no. Sweet potato casserole with a crunchy topping of pecans and brown sugar is a perfect 'dessert disguised as a vegetable side dish' that will always be part of our Thanksgiving meal!

We don't serve sweet potatoes/yams with the Turkey day meal. If we did have it, it would be savory and not sweet. I do not like the sweet potatoes covered with marshmallows.

On a side note, Whole Foods makes a really delicious sweet potato dish seasoned with Garam masala that I plan on making this weekend. Basically, it's just cubed & roasted sweet potatoes seasoned with garam masala.

We never had them when I was growing up. When I had Thanksgiving at a friend's house (she's from AL), I was horrified to look at the orange, marshmallow-topped goo on the table...

And then I tasted it.

I have never had the nerve to make them with marshmallows, myself. I have made them sweet (had a yummy recipe with apple cider, years ago...), I have made them savory. I like them any which way. And I happily eat them with marshmallows when someone else makes them!

A Must. But PLEASE no marshmallows, Red Hots, crushed pineapple or puree.

I use a recipe from Nov 1995 Sunset magazine.

Shhhh, don't tell my family it's vegan, as they are traditionalists.

Peel and slice potatoes into rounds about 1/4" thick and layer into baking dish slightly overlapping. Whisk apple juice, maple syrup, molasses, brown sugar, cinnamon and allspice together then pour over potatoes and bake for about an hour.

What is your stance on the whole sweet potato issue?

Don't eat them!

And if you do eat, have them as either a plain vegetable or a dessert. Not a veggie disguised as a dessert at the dinner table.

Yes on the sweet potatoes.

The darker red ones too, not yams!

boil in pot for 15- 20 minutes so the skin just slides off
save water from boiling
slice into rings
place in rectangular pyrex dish
top with sugar and pats of butter I give a nice coating of sugar over the whole pan, not too much though.
add a little water from pot, about 1/4 inch deep
bake at 350-375 until lightly browned on top and potatoes are soft but not mush. The time and temp depends on how fast you want or need them.

I also cook apples the same way, I just skip the boiling part and peel and cut the apples into wedges.

Love them! I make sweet potatoe pie so I normally skip them in the main course and only serve them at dessert. But, I also love them in the casserole with marshmellows and nuts - so I might make that at Christmas.

I make an unhealthy casserole with whipped sweet potatoes, eggs, maple syrup and vanilla then topped with a brown sugar and pecan crust. My family requests them every year. I could take them or leave them.

This year I'm trying them cubed/smashed, not whipped, baked with a with nut topping (Chopped walnut or pecan, butter, salt, and just a hint of brown sugar). Hold the marshmallow please.

@Kristen - I thought you of all Peas would appreciate that I currently have a pan of sweet potatoes baking side-by-side with a pan of GREEN BEAN CASSEROLE! All happily bubbling away in my free-standing WHITE electric stove (just to prove that we really are tacky savages at best!)

These are what I am doing. SO yummy, and not all marshmallow junk. They are sweet & spicy.

Simple Sweet Potatoes

3 lb. sweet potatoes, peeled and sliced crosswise in 1⁄4-inch-thick rounds
1 cup (2 sticks) unsalted butter
1 cup light brown sugar, packed
3 cinnamon sticks (or ground cinnamon just toss a few shakes in there)
1⁄2 tsp. ground nutmeg (or Pumpkin Pie Spice)
1 tsp. salt
1 orange, thinly sliced into rounds (had a grapefruit so I added that too)

1. Preheat oven to 350 degrees F. In an ungreased 2-quart baking dish place sweet potato slices,
overlapping slightly and covering the dish. In a saucepan, melt butter over low heat. Stir in brown sugar,
cinnamon, nutmeg, and salt. Cook until sugar is dissolved, then add the orange slices. Pour the mixture
over the potatoes, covering the entire surface.
2. Cover the dish tightly with foil. Bake 40 minutes, or until the sweet potatoes are tender when pierced
with a fork. Remove foil and bake 20 to 25 minutes more or until the top is golden brown. Let stand 15
minutes before serving. Makes 8 to 10 servings + leftovers.
