I feel like I am forgetting something...

Mashed potatoes
Cope's Corn
Roasted Green Beans with Shallots (recipe toward bottom of this post)
Cranberry relish
Waldorf salad
Rolls and butter
Pumpkin cheesecake
Mixed berry pie

We are not a fan of sweet potatoes.

Duh, I went to edit and I deleted..


Here is that recipe:

Roasted Green Beans with Shallots

6 Medium Shallots
1 lb Green Beans, trimmed
5 cloves Garlic, coarsely chopped
3 Tbs Extra Virgin Olive Oil
1 tsp Kosher Salt
1/2 tsp Black Pepper
1/4 C Flat Leaf Parsley, finely chopped
1/4 C Toasted Hazelnuts, coarsely chopped
1 tsp Lemon Zest, finely grated

Position rack in center of oven, preheated to 450 degrees. Cut each shallot lengthwise into 1/4" slices. Put shallots, green beans, and garlic in large bowl; toss with the oil. Sprinkle salt & pepper over the vegetables and toss again. Transfer to a 10 X 15 inch Pyrex dish and roast until vegetables are tender and lightly browned, stirring occasionally, about 30 minutes.

Meanwhile, combine the parsley, hazelnuts and lemon zest in a small bowl. Sprinkle the parsley mixture over the roasted vegetables and toss to coat. Serve immediately.

Also- you can make this recipe ahead of time and then reheat it to serve.

It's just me, DH, DS & his girlfriend this year. DD will be going to Chicago with her boyfriend and his DM for the weekend. So we are keeping it simple for the others who are VERY picky! LOL

Green bean casserole (my recipe, modified from the original' w/fresh beans among other changes)

Chele, could I have your corn souffle recipe? I have one, but I don't absolutely love it.

My menu is TBD...likely pretty basic, since my ILs aren't fans of mushrooms, sausage, brussels sprouts, green bean casserole and all the other things that are part of my traditional meal (and I'm cooking the whole meal this year...eeek!)

I'm doing my first Thanksgiving for my husband (he's American).

So far, we're doing a Turkey breast with apple-bacon stuffing for a mini side as there's not really enough of us to get a whole turkey. We'll have brussel sprouts with pancetta, cornbread and garlic mashed potatoes. For dessert I'll make an apple pie and a pumpkin pie. Hopefully that's enough.

Nicole in TX, for your roasted green beans with hazelnuts and caramelised onions do you follow a recipe or wing it? If you follow a recipe, do you mind posting it please? I did asparagus with roasted hazelnuts and a pomegranate dressing for my dad's birthday which was nice so the beans sound great to me.

ETA: cranberry sauce from the shop since that's what he prefers. :\

We are supposed to go to my mom's and only be responsible for the beer, wine, and soft drinks (since it's 4 hours away). However, I have had a respiratory thing going on for a week and I think ds might be coming down with it. If that's the case, we won't go and infect everyone, so I will make a small meal here for us. I've been thinking about it so that I can have most of the stuff on hand, and I will make:

green bean casserole
corn casserole
bacon-wrapped green bean or asparagus bundles (I don't think I can get fresh asparagus right now)

My sister and her husband are coming and they THINK we are going out to dinner. She had said that she didn't want us doing all that work so we should just go out. I told her it was fine with us.

I know they would really enjoy a home cooked meal. They go out and eat all the time. So my DH and I decided to surprise them and cook.

I am still trying to decide what to cook. I have come across so many great recipes thanks to all the Thanksgiving posts.

We are not a fan of sweet potatoes.

I know we WILL have sweet potatoes. We them.

Oh, Nicole ... that Roasted Beans recipe sounds so good that I'm going to swap out the "traditional" green bean recipe for it!

I don't think anyone will be too upset about it. Those of us who actually EAT vegetables (read: NOT my dad or my son, ) will appreciate the fresh dish.
