How do they do these scenes with Arizona's leg or should I say without her leg?

They probably use a green sock. You have heard of a green screen where you stand in front of it and later they can have a giant space battle using CGI.

They can do the same with people. They wear a green suit or just a green sleeve on one arm or a green stocking. They can then CGI in anything they want later.

I didn't know about green socks! I knew about screens from the weatherman. Very interesting!
