More avocados are consumed during the Superbowl than any other day of the year!
So to stir up an old debate, how do you make your guacamole?
I'll go on record as saying that if you add mayo to your guacamole, I'm sorry. You're crazy.
I was looking through a Tyler Florence cookbook I have and he uses olive oil in his. I'm torn. I like Tyler Florence, but olive oil in guacamole?!? |

I mash the avocados, add a dollop of plain yogart, some mild salsa, and mix it up. keep it plain!! | |

Avocados, tomato, onion, cilantro, lime juice, and Kosher salt. Definitely NO mayo and NO olive oil!   |

Mashed avocados, kosher salt, fresh lime juice, cilantro and chopped red onion. I don' like peppers or heat, so I leave that out. |

I wanted to get some yesterday, but they were all rock-hard and bright green. No point in getting them when there's not enough time to get them to ripen.  |

You can try ripening the avocados by putting them in a paper bag with some apple maybe.
Coming back to say my guacamole is pretty simple: avocados, lime juice, diced onion, garlic, Serrano chiles, cilantro, salt, pepper. If it was summer, I might throw in a seeded, diced tomato. |

Exact same recipe as scrappower however I limit the lime juice and tomato "liquid" so as not to make the guacamole too fluid.
I also chop, not mash, the avocados so they are a little chunky. I dislike smooth-as-silk guacamole. | |

Avocado, minced garlic and red onion, fresh cilantro, salt and pepper and a generouse squeeze of fresh lemon juice. |

Avocado, garlic, red onion, lime juice, kosher salt. I only put in tomato when I have fresh garden tomatoes. |
