Essentially, it's elbow macaroni, green pepper, onion, hardboiled eggs, mayo and velveeta cheese.
I've been making it for a couple of decades and have never found anyone that has heard of it before. |

Mac salad is a staple of meals in Hawaii. Minus the velveeta and egg.

This starts out as a warm mixture so the cheese almost melts completely. It doesn't look or taste anything like the typical macaroni salad... |

My family is from Hawaii and my grandma used to make a salad very similar: elbow mac, mayo, onions, black olives, tuna, and hard boiled egg. One year she thought she'd be adventurous and add in cubed velveeta, and my whole family had a fit! She never made that mistake again. Anyway, when I went to Maui and ate at Brudda Hut's (makeshift cafe in his front yard...very yummy!) his macaroni salad was eerily similar to my grandmas. |

I remember going to lunch at a new acquaintance's home back in the 70's and she served a macaroni and cheese salad as a side. It started with the Kraft mac and cheese in the small skinny box. After she cooked it, she added relish, mayo and celery...I don't remember what else. I ate it at the time and I have never had it since. | |

Years ago my MIL was making fun of her sister in law stating the she made macaroni salad by making mac and cheese and adding the other stuff eggs, mayo etc to it and OMG wasn't that crazy and stupid of her to think that's how you make macaroni salad?
I never saw or had it and I wonder if this is what her SIL was making? She was born and raised here in MI though and has no ties to Hawaii that I'm aware of. |

I had it many years ago. I can't remember where I had it. I liked it a lot. I neither like Velveeta or macaroni and cheese.
I remember buying block of Velveeta just so I could make it for freinds and everybody looking at me oddly when they tried it. lol. | |

twinsmom - maybe this version is a WV thing? Sorta like pepperoni rolls?? Btw, have you had the stuffed pepperoni rolls from the Wild Mountain Bakery on High Street?? I never seem to remember to stop when we are downtown...

For years, Kraft had a recipe for such a salad on the side of its box. Don't know if it still does since I don't buy it anymore. I don't recall any of the details, but I seem to remember it being made with cooled macaroni ... but you know people, they could have seen it on the box, thought it was a good idea, and just assumed you made it from warm mac and cheese.
