I made a batch of Texas caviar for the game last night but there is Anton leftover. Does anyone have ideas on how to use it up (preferably healthy ideas)? I could put it in eggs but what else?

I've never had Texas caviar but I Googled a recipe and I think you could add it to hamburger soup or tortilla soup.

I would top grilled chicken with it and make quesadillas with it inside with the cheese.

Those are some good ideas. Do you think it would freeze well until I'm ready to make those meals? It has black beans, corn, fresh salsa and cilantro.

If you are going to put it in something else, you could freeze it, but it will be mushy.

I would put it in Taco Soup, and then freeze the soup. It only takes a few minutes to whip up the soup, and then you'd be done.

Taco soup is a good idea. What else would you add to the Texas caviar to make the soup?

ETA just found a recipe that will be perfect.

If your recipe doesn't already have it, I like to add a can of refried beans to my taco soup. Makes a nice thick broth.

I make a bean salsa with similar ingredients (beans, corn, canned diced tomatoes, bell pepper, onion, etc.) and freeze it all the time. As a matter of fact, I usually make it to freeze so that we have a snack on hand. Anyway, it doesn't get mushy; the pepper and onions don't stay crunchy, of course, but it doesn't get mushy, it's fine.

i would add it to a tortilla wrap for lunch, with turkey and lettuce or whatever meat I had on hand. I like the other suggestions you've received too.

I like the casserole idea ^^.

I think it would make a great taco salad with romaine and cheese! I love Texas caviar. I would take it to work with a bag of chips if you really need to get rid of it. No co-worker here has ever refused free food.

I eat something close to that for lunch quite often. Low carb tortilla, black beans, corn, onion, bell pepper, greens, salsa, and cheese. Vegetarian wrap.

fry up some potatoes and sausage, then add it to that. I like to section up the "hash" and crack two eggs over each section. cover the pan until the eggs are set.

Thanks for all of the great ideas! I ended up just throwing it in the crockpot with some ground beef and chicken broth to make tomato soup. I had the ingredients already and needed something for dinner anyway. I work late today so DH and the kids can eat earlier and I will eat when I get home. I will save the other ideas for next time, though!
