I made up a veggie soup recipe based on one my grandma used to make all the time when I was a kid. It includes: onions, carrots, garlic, diced potatoes, canned green beans, canned white beans, diced tomatoes, creamed corn, frozen okra, and zucchini. It has a ton of other (non-veggie) ingredients, but it is oh so yummy!

Someone can ask a question here just to discuss or because they want to know what other people like. It doesn't mean she doesn't know how to make vegetable soup.

I love: peppers, carrots, zucchini, canned tomatoes, onion, cabbage, cauliflower, spinach...

I make mine with chicken because red meat is a luxury that makes me instantly feel sluggish so I reserve it for medium rare with garlic spinach and baked potato.

MIne is different every time as I tend to use what I have on hand!

I like to put tomatoes, onion, carrots, potatoes, sweet potatoes, green beans, corn, and cabbage. The cabbage is my favorite part - it makes it kind of sweet.

Mine is called hamburger soup. Besides ground beef it has barley, cabbage, potatoes, corn, carrots, peas, green beans, diced tomatoes, and onion. Plus stock, seasonings. So yummy.

My favorite vegetable soup has cabbage, carrots, onions and tomatoes (canned). I don't mind if it has green beans, but I don't miss them if they aren't there.

I just throw in whatever we have, but dd and I like:
Carrots
Onions
Chinese broccoli
Potatoes
Cabbage or Brussels sprouts
Kale or spinach
Corn
Celery
Garbanzo beans
In chicken broth and served with either rice or veggie noodles and some dried seaweed crumbled on top.

It's kind of a crazy mix but it's evolved into the "best soup ever" and it's titled that way in dd's cookbook that she's put together of her favorite recipes.

It depends what kind of soup I'm in the mood for but generally you can always find broccoli florets in my soups. My favorite pureed soups are leek and potato soup and squash and carrot soup (however, I don't like the texture of squash on it's own, it has to be pureed. I'm picky LOL.)

In Texas we have a grocery store called HEB and in the freezer section there are very inexpensive bags of Soup Vegetables which consist of carrots, peas, celery, potatoes, zucchini, okra, corn, green beans and lima beans. I pick the okra out and give it all to my husband.

I love vegetables, so I just add whatever we have in the house at the time. It would be easier to say what I wont add, which would be white potatoes (I prefer sweet potatoes), zucchini (to mushy), or corn.

All of them.

Well, most of them anyway. When I make vegetable soup, I put in a little bit of everything I can find at the store and farmer's market that looks good and fresh and seems like it might go well in soup. Green beans, squash (zucchini, yellow, chayote, or a little bit of all of them), cauliflower, broccoli stems (peeled and cubed), carrot, bell pepper, cabbage, kale or other greens cut into strips, tomatoes, cilantro or Italian parsley, corn (I take fresh cobs and cut them into slices and throw the whole thing in there), celery, onion, garlic, mushrooms, maybe cubed turnip or potato, a sliced up jalapeno (seeds and all) for heat. I'm probably forgetting something too... And for the soup base, I use half V8 or other brand equivelant and half vegetable stock. Once you simmer all those veggies together in the stock the flavors just start to come together and you get an amazing garden vegetable soup that's way healthy and simple to make (except for all the washing and chopping).
