Ooey gooey butter cakes with pumpkin by Paula Dean.

Oatmeal pumpkin scotchies cookies.

Pumpkin bread. Or pumpkin a chocolate chip cookies.

One year I googled a pumpkin sheet cake recipe and then used it to make pumpkin cake balls mi used cream cheese frosting and dipped in chocolate or white chocolate.

I made some delicious pumpkin dip last night.

1 can of pumpkin
1 container of cool whip
1 pkg of vanilla pudding mix (5oz size)

Served it with vanilla wafers. SO delicious! I used sugar free cool whip and it was great. If I had known there was sugar free pudding mix, I would have used that for a totally sugar free option. Sugar makes me if I eat very much of it, so I only sampled this recipe.

I also made pumpkin cream cheese bread that was delicious. I substituted splenda blends (half splenda, half sugar) in this recipe, and no one could tell the difference.

I really want to try combining pumpkin with cookie butter. Trying to decide on a recipe to try our the combination. Any suggestions?

Easy and relatively low cal pumpkin muffins:

One regular size can of pumpkin, one box of cake mix (I use spice cake), mix together and bake in muffin tins according to the baking directions for cupcakes. (don't add any eggs or oil)

I add a little pumpkin pie spice, and a little water if needed to thin out the batter.

12 muffins, about 140 calories each.

I just made pumpkin dump cake last p.m. My kids gobbled it up. It made the house smell amazing, too.

I think it's sooo much better than pumpkin pie!

Cor, those recipes are positively droolworthy, but, dagnabbit, it is really difficult to get hold of canned pumpkin in the UK without paying silly money to buy it online.

A friend posted this on FB, and I am making it tomorrow as soon as I can get the can of milk.

Homemade Pumpkin Spice Coffee Creamer

one 14 oz can fat free sweetened condensed milk
1.5 cups skim milk
1/2 cup pumpkin purée
1/2 tbs vanilla
1/2 tsp pumpkin pie spice
1 tsp cinnamon

Put it all in a blender and voilá! It makes about 26 oz and is 1 point per tbs.

Annie, you don't have to use canned pumpkin. It's just cooked, mashed pumpkin anyway, so use fresh and make your own.

OMG. I just scrolled through the epic thread and saw someone posted Carnival Cruise lines pumpkin soup recipe. I actually screamed out loud. I have been trying to find a recipe for that since my senior spring break cruise in 1998! That was probably my most favorite thing I ate on that trip.
