Has anyone taken any online Illustrator classes? I'm interested in learning Illustrator and was wondering if you have any advice as to which ones are good and/or which ones to stay away from. I just want a beginner class, nothing too in depth and I'd prefer to spend $50 or less on the class.

Honestly, I've found Illustrator so hard that I have taken classroom classes rather than online. I've been doing Illustrator for years and still struggle with it, it's just not as intuitive to me as Photoshop. But I'm sure a lot of people have successfully navigated online tutorials and classes.
I recommend the Adobe Classroom in a Book for Illustrator, it has a CD rom with it with all of the exercises.

Check out Lynda.com. All her classes are great. This is a subscription service, but it's $25 a month. And you could learn a lot in two months if you wanna keep it at $50.

I find it very non-intuitive also. And there are things that don't translate over from Photoshop... I get used to doing things a certain way with the pen tool, and then they don't work in Illustrator. I just don't use it often enough, so every time I go back to it I have to figure things out all over again! (Aaaagh!) I used to use Corel Draw quite a lot and loved it, but I'm just not there with Illustrator.
