|Posted: 11/4/2009 4:39:39 PM|Is there any way to make the boxed Jiffy Cornbread if I have no eggs or egg substitute? I tried to google, but just got a lot of stuff about using egg substitute instead of eggs, which I obviously don't have either.

well, believe it or not, we made it in high school chemistry using Johnsons baby shampoo...well, maybe we made a cake, don't remember. both are emulsifiers so it worked and it did not taste like shampoo. I just had to throw that in, I would use butter or oil.
I'm just PEAchy - thanks for askin'

A friend of mine is vegan and made me a dozen of the best chocolate chip cookies, I had to ask what her substitutes were. 1 egg=1/2 a mashed banana. She has used it in all kinds of cookie and quick bread recipes.
