I have a pot of chicken and noodles going, but no clue what to make with it.

Any suggestions from the peanut gallery?

Well, it's not nutritionally sound, but mashed potatoes for the bottom of the bowl.

Something green-- so a salad, or broccoli, or green beans is usually what I do.

I also have banana bread in the oven for later.

Chicken and noodles sounds tasty!!

Why put mashed potatoe at the bottom? Isn't that where the needles go?

I'm confused too. Wouldn't the noodles go on the bottom and then the chicken in whatever sauce go over the top? I'd serve with salad and something green like broccoli or green beans.

I make my chicken and noodles in one big pot. They are thick, almost stew-like, a gravy if you will, by the time they are ready to eat. Sooo yummy.

I am assuming those that eat it over mashed potatoes do so because it is almost like a gravy.

If you have a Bob Evans restaurant in your area they make the BEST dish that is biscuits with mashed potatoes and homemade chicken noodle soup poured over top of everything. Starchy but oh so yummy! Like a combo of biscuits and gravy but with chicken noodle

I had never in my life heard of eating chicken and noodles on top of mashed potatoes until I met my dh. The first time he made it that way, I thought how gross...But, after 20 some years, I now love it that way, and my kids almost won't eat chicken and noodles if I don't also make mashed potatoes.

And no, it's not gravy-like...at least mine isn't. It's just normal chicken and noodles scooped over mashed potatoes.

I serve cornbread with it. Yumm...wish I was having that for dinner!

I want the recipe, too. I've made chicken & noodles, but it isn't as stew-like as I would prefer.

I love the chicken & noodles at Bob Evans (don't have any around here so I always enjoy it when I have the chance).

I would serve it with biscuits and a green salad and/or fresh fruit.

Oh my, a recipe? I don't really use one, but I will give it a shot.


Make either homemade egg noodles or use the Reames noodles from the frozen food section. Really they are just as good as homemade.


1. In a large pot pour in 1 carton of chicken broth.
2. Add whatever bone in chicken you like. I use breasts. The bone adds flavor and will be removed later.
3. Add water if needed to cover the chicken all the way.
4. Cook on medium heat until chicken is done.
5. Remove chicken and allow to cool a bit
6. To broth add two bags of the Reames noodles, or equivelant of homemade noodles
7. Bring to a boil, stirring to keep from sticking to the bottom, turn down heat to a simmer after it boils
8. Remove chicken from the bone
9. Shred or chunk the chicken
10. Add the chicken to noodles
11. Add chicken soup base to pot if needed for more flavor
12. salt and pepper to taste

The key is to let it cook long enough to thicken. The flour in the noodles cause it to thicken.

I usually start the process two hours before eating.

You could add other things, but this is how dh likes it.

Never in my life heard of chicken and noodles over mashed potatoes. Interesting, but doesn't sound like something I will try ... lol.

In our house, it is a one pot meal. Crackers available, if desired.

I serve it on a plate with the other sides. It is not soup.

The consistency ends up being like the liquid part of a pot pie.

The leftovers I have will have all the liquid soaked up by lunch tomorrow.

Just a quick google came up with this picture. This looks like what I end up with. I do not shred my chicken like in the picture. I have larger chunks of chicken.

wow, i have never met anyone else who does chicken and noodles over mashed potatos! i love them and make them when we have tummy bugs at our house, or when it's really cold, or when i'm needing comfort food....

I think the chicken & noodles over mashed potatoes thing may come from the Amish. I get it everytime I go to Amish country - it is so good!

For a quick and easy way you can just cook up some egg noodles and mix in cream of chicken soup and some chicken. Then serve on top of mashed potatoes.

You can also cook it in the crockpot, I do:
-2 frozen chicken breasts
-2 cans cream of chicken soup (or 1 large can)
-1/2 cup water
-pepper to taste
-optional: sliced onions, carrots, peas, parsley

Then I come home and shred the chicken, cook up some egg noodles on the stove and mix it all up.

OP's recipe sounds good I'll have to try that one too.

This is an old PA dutch/Amish recipe. If yoyu can't find the frozen Reamen noodles in your area check the pasta isla for Kluski dry noodles. They are the same just dried not frozen.

We do this with left over chicken, turkey or beef that we have and serve it over mashed potatoes. YUM!

I'm eating them now. I added 1 diced onion, 3 diced celery sticks, and 3 julienned carrots (had to tryout my new vegetable peeler julienning thingie) to it while the chicken was boiling.

They are really good! I served them in a bowl with a piece of french bread.

I never heard of frozen noodles before but they are great!
