I make the same soups over and over:

Chicken (with matzo balls, noodles or rice)
Vegetable
Butternut squash
Tomato
Minestrone

What do you make often?

ETA: Oops. Katherine just reminded me I also make Lentil soup. Can't imagine how I forgot that. I have a container of it right now in the freezer. For a soup emergency.

Not surprising, I make my sausage soap all the time. Mainly because there's only 5 ingredients and it's ready in 20 minutes.

I made this vegetable beef soup a lot last year and will again this year. It's simple and despite the fact that it uses canned vegetables, it tastes like you used fresh.

1 pound cubed beef stew meat
1 (15.25 ounce) can whole kernel corn, undrained
1 (15 ounce) can green beans
1 (15 ounce) can carrots with juice
1 (15 ounce) can sliced potatoes with juice
1 (28 ounce) can crushed tomatoes
1 (1.25 ounce) package beef with onion soup mix
salt and pepper to taste

Directions
1.Place meat, corn, green beans, carrots, potatoes, tomatoes, soup mix, and salt and pepper to taste into the slow cooker; stir to combine.
2.Cook on LOW for at least 6 hours. Add water if necessary.


It doesn't get any easier than this and it really is delicious.

THis is classic Jewish chicken soup that I've know how to make since I could reach the stove, we had it so much:

water
chicken
carrots (I like LOTS-makes it sweeter and more flavorful)
celery
parsnip
onion
fresh dill and parsley
garlic salt
black pepper

boil it up until your house smells good!

You can add white rice, noodles or matzo balls

I just bought Sunday Soup at Crate and Barrel and I love it!

I love all kinds of soups; chowders, tomato based minestrones, chicken soup, squash etc., wild mushroom, Cioppino, Pho.... mmm!

I also made a really great black bean soup that I loved, but I lost the recipe for. It had cumin in it, which I love. Gotta find that one again.

These soups & stews are heavy rotation at our house, 3-4 nights a week:

Wisconsin cheese (usually with cauliflower)
Olive Garden's pasta fagiole (copy cat recipe)
Cheeseburger Soup
Chili
White chicken chili
Creamy tomato

Several times a season we will have PA Dutch ham pot pie (this is a thick soup/stew), beef stew and turkey noodle.

I am always experimenting and trying new soup recipes though to add them to our heavy rotation list. In the last week and a half I tried out a corn chowder and pumpkin chili recipe that did not make the cut.

Our most common because it is so easy is refried bean soup.

others:
cream of garlic (our fave!)
cream of potato
pumpkin/squash
white chicken chili
regular chili


If anybody has a good cream of lentil soup I'd love to have it!! I had it once in a restaurant and fell in love.

ScrappyAunt, here you go. It's super easy and delish:

1/2 pound sausage (She uses sweet Italian sausage removed from the casing)
1 onion, chopped
1 2lb-3oz can of italian tomatoes
2 13 3/4 cans chicken broth
1 tsp crushed basil
1/2 cup orzo or ascini de pepe
salt and pepper to taste

Cook sausage and saute onions. Add tomatoes, broth, basil, salt and pepper, bring to a boil. Stir in orzo. Simmer 20 minutes

Note, May want to add more chicken broth or it sometimes gets more like a stew when leftovers are refrigerated (I think the orzo absorbs the liquid) - but even as a "stew" it's great).

Anyone willing to post their white chicken chili recipe?

Soups/Stews I make often are:
Chicken (or turkey) with Noodles, rice or dumplings
Beef and barley or vegetables
Leftover mashed potato soup
Italian wedding soup
Tuscano soup
Noodle soup (this is mostly just a lunch soup since it's just chicken stock, acini de pepe and a big handful of grated parmesan)
Chili with lentils instead of beans
and Lentil soup

Italian wedding, split pea, butternut squash, lentil and vegetable are the soups I make most open. I make a lot of chili also. The sausage soup sounds really good - I'll have to try that soon.

Chicken Chili

2 tablespoons butter
1 onion, chopped
2 cloves garlic, minced
1 can chicken broth
1 can diced tomatoes
1 can diced green chiles
1 can creamed corn
1 can white beans
1/2 teaspoon dried oregano
1 T chili powder
1/4 teaspoon ground cumin
1 pound cooked chicken breast, cubed
Salt and pepper to taste

I cook the onions in the butter until they are soft and dump everything else. I serve it with shredded cheddar and sour cream.

Here you go Lauren. This makes a lot of soup so you'd have lots left to freeze.

Olive Garden's Pasta Fagiole

Ingredients:
1 lb ground beef
1 cup diced onion
1 cup julienned carrot
3 stalks celery, chopped (1 cup)
2 garlic cloves, minced
2 (14 1/2 ounce) cans diced tomatoes
1 (15 ounce) can red kidney beans (with liquid)
1 (15 ounce) can great northern beans (with liquid)
1 (15 ounce) can tomato sauce
1 (12 ounce) can v-8 vegetable juice
1 teaspoon vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 lb ditali pasta

Directions:
1 Brown beef in a large stock pot over medium heat-drain off fat.
2 Add onion, carrot, celery and garlic and saute for 10 minutes.
3 Add remaining ingredients, except pasta, and simmer for 1 hour.
4 After 50 minutes boil pasta to al dente.
5 Drain well.
6 Add pasta to the large pot of soup and simmer for 10 minutes.

Two of my favorites are:

Creamy Chicken and Wild Rice Soup
4 cups chicken broth
2 cups water
2 cooked, boneless chicken breast halves, shredded
1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup all-purpose flour
1/2 cup butter
2 cups heavy cream (I substitute milk. Cream makes it too thick.)

Directions:
1.In a large pot over medium heat, combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
2.In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
3.Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.

Chicken Enchilada Soup (tastes just like the one at Chili's)
1 pound skinless, boneless chicken breast halves
1 tablespoon vegetable oil
1/2 cup diced onion
1 clove garlic, minced
1 quart chicken broth
1 cup masa harina
3 cups water, divided
1 cup enchilada sauce
2 cups shredded Cheddar cheese
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin

Directions:
1.In a large pot over medium heat, cook chicken breasts in oil until well browned on all sides. Remove and set aside.
2.Cook onion and garlic in remaining oil until onions are translucent. Pour in chicken broth.
3.In a bowl, whisk together masa harina and 2 cups water until well blended. Pour into pot with remaining 1 cup water, enchilada sauce, Cheddar, salt, chili powder and cumin. Bring to a boil.
4.Shred cooked chicken and add it to the pot. Reduce heat and simmer 30 to 40 minutes, until thickened.

They are both so easy and sooooo good! Enjoy!!

I love soup. I'd make at least one pot of soup a week in the fall/winter. After 5 years of knowing DH and 1 year of marriage he tells me he doesn't like soup. Seriously, how can you not like soup? So now I make it sparingly, every couple of weeks. I've found that if I make a chunkier/heartier soup that he can ladle the stuff from with little broth, he'll eat it.

Taco/Chicken enchilada soup
Wild Rice & ham soup

Those are the two that he will eat without much compliant.

But I love split pea, navy bean with bacon, beef barley, chicken noodle, corn chowder, clam chowder, pumpkin soup.

white chicken chili recipe?


here's my version:

take 4 boneless skinless chicken breasts or 3 split chicken breasts and cook in crock pot with a cup of water in the bottom until the chicken will shred with forks. if using split chicken breasts, remove the skin and bones when chicken is cooked through. by this point, you should have a good bit of chicken broth in the crock pot. add 2 cans of white shoepeg corn, 2 cans of great northern white beans and 2 mccormick chili seasoning packets. stir well and simmer until ready to eat. i serve mine with a dollop of sour cream on top.

Throwing an apple into thicker soups is fantastic!

Well we don't make that many soups but that is going to change as we are in Canada now (brrrrr......) SO thankyou ladies for some yummy recipes!!!! The only soup I make is Chicken noodle soup from scratch and its a combination of 4-5 recipes lol!!!
