I can't remember if it was dh or I, but one of us bought a huge bag of dried tortellini from Costco. I just noticed the use by date is today. I am making alfredo tortellini as a side with dinner tonight.

Any favorite recipes so I can use up the rest later this week?

I don't have a recipe but we do one with brown butter and fresh parmasean sometimes we'll add chicken and or bacon! It's on of my favorites!

We like to cook them, then toss with a bit of olive oil, LOTS of chopped roma tomatoes, crumbled feta, capers, and assorted herbs. Sometimes we'll toss in a bit of freshly grated Parmesan, too.

Cindi, here's the RECIPE.

When I'm in a hurry I use the jar sauce. I haven't made this dish in a long time, and would now, probably make my own sauce to go on top. Enjoy!

I made tortellini and spinach soup the other night and it was DELICIOUS!

14oz vegetable broth
4 cups water
1 package white sauce mix
1 cup fresh mushrooms
whole diced onion
finely chopped or minced garlic
Blend white sauce with water, add broth then other ingredients
Cook in crock pot on low for 5 - 6 hours
Add 1 can sweetened condensed milk (I think it was 12oz), dry tortellini, 6 cups fresh spinach (torn into pieces)
Cook on low for half hour

I LOVED it! Dh wont touch the stuff because he doesn't do mushrooms or spinach, and the kids hated it but I thought it was absolutely delicious and I cant wait to make it again!

Changes I made -
I didn't use the white sauce mix. Instead I used 14oz vegetable broth, a can of water, about 2 cups or so of chicken broth.
I used more mushrooms because I love them!
I didn't measure the amount of spinach I used, I just tore it up directly into the crock and stopped when I had enough for my taste.
I added a Chipotle seasoning.

One of my family's favorite recipes.

Tortellini Carbonara

2 Garlic cloves, minced
2 tsp. Olive oil
1 tsp. White vinegar
1 (9oz) pkg Frozen cheese-filled tortellini, cooked
1/3 cup Grated parmesan cheese
1/4 cup Whipping cream
1 tbs Chopped fresh parsley (optional)
1/4 tsp. Salt
1/4 tsp. Pepper
5 slices Bacon, cooked & crumbled
Saute garlic in hot oil in skillet until tender; remove from heat. Stir in vinegar; toss with tortellini. Add cheese and remaining ingredients; toss well. Warm again if needed.

I have made a tortellini spinach soup that my family really loves and it is ridiculously simple. Broth, tortellini, spinach (fresh or frozen), a little bit of sauteed onion & garlic, & some stewed tomatoes. That's it!

There is a good recipe for Creamy Lemon Tortellini bake on the Emily Bites blog. I made it last week and it was really good and very rich tasting.

This is one of my DD's faves for tortellini -- recipe calls for ravioli but I prefer it with tortellini:

I make a modified spaghetti sauce and use 2 small bags of frozen tortellini and some mozzarella cheese. It's kinda like a ravioli recipe I've seen but using tortellini instead of the ravioli. If I was using dried tortellini I'd probably add more liquid to the recipe and cook it in the sauce.

I love it drizzled with olive oil and tossed with sauteed veggies and topped with a little fresh parm

I also sometimes add sausage to it as well

Tortellini Salad

a bag of Tortellini, cooked (about 3 cups cooked?)
1 red bell pepper, chopped
1/2 (or less) red onion, chopped fine
1/2 bag pepperoni (I use Turkey pepperoni)
1 can dark kidney beans (drained and rinsed)
1 bottle (I don't use the whole bottle) of italian dressing
salt and pepper--to taste

Just mix it all together and serve it cold! My kids love it in their lunches.
