Are you looking for a baked strawberry pie or one that's more of a cream pie? I have a Strawberry Cream Pie that's very yummy. I have to go to my daughter's Thanksgiving party right now but can post the recipe later. Let me know! |

I'm jealous if you are wanting the fresh strawberry pie. Not enough good ones here to make one. I don't have any fail proof recipe so I'll look forward to squillen posting. |

I have any easy no-fail fresh strawberry pie.
Baked pie shell, cooled.
Soften 3-4 oz. cream cheese & mix with 1/4 c powd. sugar and spread in bottom/up sides of pie shell.
Wash, clean berries. Fill pie shell w/berries.
SAUCE: 3 T (heaping) corn starch, 3 T strawberry jello powder, 1 c sugar, 1 c cold water. Mix 1st three in sauce pan, add water. Bring to boil, stir on boil for one minute.
Pour sauce over berries. Refrigerate until cool. Enjoy! |

My Strawberry Cream Pie is very similar to the one Sue posted.
STRAWBERRY CREAM PIE - makes 2 pies
2 packages graham crackers, crushed
1/2 cup butter, melted
2 Tbsp sugar
Mix together and press into 2 pie plates. Chill. If you don't want a graham cracker crust, use baked pie shells.
In a mixing bowl cream together:
2 8 oz packages cream cheese, softened
2 Tbsp lemon juice
1 can Eagle brand sweetened condensed milk
1 tsp vanilla
Beat 10-12 minutes until creamy.
Put cream cheese filling into each prepared pie crust. Put in fridge for an hour to set.
In a saucepan, put and cook until thickened:
1 cup strawberries, mashed
1 cup sugar
4 Tbsp cornstarch
3/4 cup water
red food coloring
Once thick, sit the saucepan in a shallow bowl of ice water to cool. Once cool, add as many fresh sliced strawberries as you want.
Spoon over the chilled and set cream cheese filling. Spread out so it's evenly covered. Cover with saran wrap and chill overnight.

Actually it was and this is now in my "keep" recipe file. I can't wait to try it with fresh berries - the frozen berries were not so good. thanks for sharing! | |
