I do my meal plans by the month as well, Carrie! I love doing it that way. It seems easier for me to have the stuff on hand and to plan my grocery shopping, which I also do monthly. I notice that most people do a week or a few days at a time, though. |

I'm not sure which night I'll be making which meal, but this is what I plan to make this week. I don't usually cook this much beef in one week, but DD is anemic again and DH just has a taste for beef, so I'll make an exception this week.
Tikka Masala w/ homemade Naan and Coconut Rice (everything but the rice is cooked and in the freezer)
Chicken Mole with Homemade Guacamole and Yellow Rice (maybe, could be black beans) I have to wait on the avocados to ripen to make this.
Filet Roast with Roasted Shallot Sauce, with Mashed Potatoes and Green Beans
Swedish Meatballs with Mashed Potatoes, Cream Gravy, and Ligonberry Jam (I went to Ikea last weekend) this will probably be tonight's dinner
Chicken and Rice is on standby, just in case DD or DH come home sick again. We've been fighting a cold and tummy trouble for the past couple of weeks, so I've made sure I can make an alternative meal if what I have planned doesn't suit their stomach.

I have to get a little creative on Monday nights. DH has a late conference call with Asia and DS has a late college class so it's the one night we never eat together. This way everyone can eat when they're hungry/get home. Tonight I've got a few different meats, cheese, tomato, lettuce, onion, pickles, sourdough and wheat breads - pick what you like. |

I try to do a monthly menu plan as well. It's not set in stone, because I am constantly finding something that needs to be used up, or a way to spread a meal into too.
Sat - Homemade California rolls (HUGE HIT)
Sun - Family Favorite Casserole (from 40 things to do with shredded chicken on pinterest. My kids loved it.)
Mon - Tacos
Tue - Jambala (LINK)
Wed - Chicken Cresent's
Thur - Waffles
Fri - Soup and Sandwiches
Which brings me to the beginning of my new Month of Menu planning. These are the meals that we had left on my master list from Jan.
Chicken Alfredo
Split Pea (I will freeze and eat for lunch)
Stroganoff
Shepherds Pie
Sweet and Sour Meat balls over rice
I will carry these over to next month.

Jen, I do several carry over meals as well.
I'll have leftover night if we have enough stuff leftover to make meals out of (instead of me just having for lunch the next day). Or we might go out when we weren't planning.
I also do a lot of switching sides around based on how we feel that night! |

chili rellenos
Do you make these yourself?
Yes. I start with Pioneer Woman's recipe and have tweaked it a bit to our liking.

That recipe looks interesting, Deb. Thanks for posting it. I think I might try that!
Jen, here is my menu for January. My 2 older kids go to their dad's house on Tuesdays so I generally use that night for leftovers or something easy for my 4yr old and I.
Mondays we usually do soup, too. My oldest goes from scholastic bowl right to honors band and I have to take my middle one to scouts that night so people just eat when they get home. Soup is easy to keep warm for everyone!
I also do my planning beginning on the 7th of the month. I hate going shopping at the first of the month!
1/7 - beef roast with veggies
1/8 - broccoli cheddar soup, Hawaiian rolls
1/9 - Boboli mini pizzas
1/10 - turkey and wild rice soup
1/11 - waffles, eggs, fruit
1/12 - sautéed chicken breasts, rice, broccoli
1/13 - cheese steak sloppy joes, tater tots, grapes
1/14 - fish sandwiches, potato chips, green beans
1/15 - leftovers
1/16 - pizza balls, salad
1/17 - ham & cheese soufflé, yogurt
1/18 - out
1/19 - leftover soup, deli sandwiches
1/20 - spaghetti, garlic bread, green beans
1/21 - chili
1/22 - homemade macaroni & cheese, peas
1/23 - minute steaks, buttered potatoes, broccoli
1/24 - lemon butter shrimp, salad, fruit
1/25 - broccoli/chicken/rice casserole
1/26 - BBQ pork chops, corn, muffins
1/27 - ham steak, scalloped potatoes, glazed carrots
1/28 - breakfast
1/29 - leftovers, salad
