I just read something about that earlier today. I don't remember exactly, but it was something about how it is the new "fad" item, and the demand for it is so high that the people who live where it is grown can't even afford it any more. |

I have found it less expensive now that it is a fad. Years ago I was buying it for about 1.5 times what I can now get it for at Sams or Costco. I think it is because there isn't the demand for it like there is for wheat so it is grown less. I would venture to guess that maybe there aren't as many government subsidies on it as wheat, but I really don't know. |

I get organic quinoa at a good price (way less than Kroger) at Costco. I have to buy a big bag but it doesn't go bad and we use a lot of it.
You can also get it from the bulk containers at Whole Foods for less than the small 'cute' boxes sold in grocery stores. |

No Costco close by. Our grocery store has it in the bulk section but it is still $5 /lb. |

It's expensive because consumption has increased globally and three small countries produce the bulk of the world's quinoa. By comparison, a ton of quinoa is in the thousands of dollars while a ton of flour is about $300.

I can't imagine. I tried to like it, soaked it, prepared it in a few different ways, but our whole family found it nasty. |

A friend of mine buys salsa at the store and then mixes it with quinoa for a quick salad. It's good, especially with mango salsa.
I've prepared quinoa once and it didn't knock my socks off. It is a good source of protein so I'd like to experiment with it a little more. |

If I had to compare quinoa to something I'd say it is most similarly like couscous, except it has a slightly different texture and a bit of a pop in your mouth, and it is a bit nuttier. We eat it regularly, one dd loves it with avocado and feta cheese, but I mix it with many different types of salads - last night we had it In a lentil salad that I made for company and everyone raved about it.
I've recently read that quinoa has increased in price lately because of a much higher demand. In fact, small communities that produce quinoa and used to live off of it because it was so available and healthy, can no longer afford it and whole communities are suffering the health consequences of not having it in their diet anymore. The article looked to North American vegetarians who pick vegetarianism for humanitarian reasons but don't know the effects of their quinoa fad on others around the world. It is so hard, we North Americans get slammed a lot!
It is more expensive for us in Canada, maybe $7/llb. So I buy it at trader joes and think it is a bargain I've bought it at costco too, but I prefer the trader joes one.

Patti - did you rinse it first, it is a bit bitter if not rinsed properly.
I cook mine in my rise cooker with broth instead of water and it comes out perfectly every time.

I make patties out of quinoa.
Cook 1 cup of quinoa per direction.
Mix with 1 egg
Green onions chopped
Salt
Pepper
Carrot or Zucchini shredded
Make mixture into patties
Fry lightly on both side in a pan with olive oil
Serve
Family loves it cooked this way. | |

ETA: I follow this blog for tons of great recipes using Quinoa. I have also been following the Suzanne Sommers "Sexy Forever" plan for about 3 weeks now and have started making "breakfast quinoa" instead of oatmeal.
I cook a batch of it, keep it in the fridge, then warm 1/2 a cup with a splash of almond milk and cinnamon. It's not the same as oatmeal but I find it causes less bloating and since it's a protein it keeps me feeling full longer than oatmeal. | |

Thanks for the links to recipes! I have made quinoa a few different ways. The first time I used a recipe from "The Eat Clean Diet" and everyone really liked it. Basically, you saute some onions and garlic, then add the quinoa and chicken broth. The next time I used a brand that was not already pre-soaked and didn't use the chicken broth. The kids didn't like it. I have also made quinoa pizza bites, which were really good. |
