For breakfast every morning:

Green smoothie

spinach
kale
banana
berries
carrots
apple
dried figs
coconut water
and any other fruit I may have in the frig

I blend it all in my Vitamix and I am good to go.

If you are going to do smoothies-I'd reccomend going way heavier on the veggies than the fruit. a little bit of fruit is ok, a lot is not. I'd do a small handful of blueberries and leave it at that.

Nothing too 'out there' but stir frys are my fave healthy meal. Strips of chicken breast, loads of veg and a splash of low salt soy sauce. Simple delicious

Check out skinnytaste.com we have made a handful of her recipes. The latest hit was her broccoli potatoe cheese soup...we even made a double batch after having it the original time just so we could freeze it and have it on nights we don't feel like cooking.

Mayo Clinic White Chicken Chili

This is so different. The only thing white about it is that it uses chicken.

It's not a chili with a thick sauce. It's light and bright with cilantro.

We use free range chicken when we make it. We also grill the chicken for a few minutes first and then add it to the chili. It makes it even better.
