Monday is the inaugural day for Internation Cupcake Day, according to E-Talk (Toronto).

I would like to bring cup-cakes to work.

I would like a light, fluffy cupcake batter recipe. Vanilla, chocolate or any other flavour that you enjoy.

I am using whipping cream (with Dr. Oetker Whip-it) for the top and then a fresh strawberry.

It doesn't sound like what you are looking for but I just made some amazing frosting. I

1 pkg. jello (any flavor..3 oz.)
2/3 cup sugar
1 t. vanilla
1 egg white

put in metal or glass of stand mixer. add

1/2 cup boiling water.

whip on high for 5 (or a few more) minutes.

I piped mine out of a gallon freezer bag and sprinkled with a few sprinkles. They are really really sweet but my teens are digging them.

Thanks - I am looking for cupcake batter - the cupcake part.

Your frosting/icing (which word is correct ) sounds amazing. I may use this for some of the cupcakes.
