I was just sitting here thinking about a small container in my fridge of left over rice from a Chinese restaurant & wondering what to do with it. So I looked up Pinterest recipes for rice pudding. Found a great one & it's soooo good! I halved the recipe, used almond milk & added raisins. It's been so many years since I've had rice pudding. This recipe did require a beaten egg & some butter which I thought was strange b/c I've never made it with either. But it's so creamy & good!

I like American rice pudding but I love the middle eastern rice pudding flavored with rosewater. Mmm so yummy.

I have no idea what rosewater would taste like or where to get it & I've never been a big fan of eggnog.

However....

I make Indian rice pudding (Kheer) flavored with Green cardamom, saffron, almonds and raisins.

I love rice pudding. It's a comfort food for me. I make it with egg and butter too.

You no likey raisins??? I *LOVE* raisins in so many things like banana bread, bread pudding, pumpkin cookies, pumpkin bread & many, many other things! It's funny b/c dh & ds are not fans of them either!

I love raisins alone or with chocolate or yogurt covering them. Otherwise nope.

benem, I think it would be just as good without the butter. I barely used any... Actually I think I may skip that step next time I make it.

The recipe I use calls for a stick of butter. I don't put it in. I did the first couple of times and then when I didn't, no one noticed.

I love rice pudding but I make mine vegan with coconut milk. I'm not a huge fan of raisins in pudding either, so I use almonds and pistachios.

Mine came out super creamy & I would say a custard consistency. Now I'm trying to think back when I made it years ago whether I used left over rice or not... Can't recall.


The recipe I use calls for a stick of butter.


I used about a tsp in mine.

Another non-fan of raisins in rice pudding, but I do like it. Mom used to make it with (fresh) goat's milk & it was so yummy.

Like some posters, I used to think starting with uncooked rice was the 'best' option. Turns out that cooked rice (especially from my Chinese takeout) works pretty well. I've started saving leftover rice & freezing it. Works for lots of dishes including rice pudding.

I just made some today too.

1 can evaporated milk
1 1/4 cups milk
1/2 cup sugar
1/4 cup raisins
1/2 cup cooked rice

Sprinkle nutmeg on top, bake at 350 degrees for 30 minutes.

Anyone have a formula for making a rice pudding in the microwave using cooked rice?

Want to share that I don't mind golden raisins, but no fan of the dark ones.

The recipe I have makes a huge batch! I've tried cutting it back but it just doesn't taste the same! My dad was a cook in the Army in Korea and he brought this recipe home with him. I love it topped with Cinnamon and Sugar - warm or cold!

I like the concept of rice pudding but can't get past the texture of the rice in the pudding. I keep trying it and keep getting the same let down.
