You can always substitute homemade white sauce for cream-of soup in this kind of recipe. Just add a little more seasoning. |

5# potatoes---cooked, peeled and cubed
1 stick butter
2 cups shredded cheddar cheese
1 bunch green onions sliced
16 oz sour cream
salt & pepper
Melt all but 2 tablespoons of butter, add cheese (reserve small amount for top) and melt slowly. Stir in sour cream. Then add potatoes and green onions and coat. Season with salt & pepper.
Pour into greased casserole dish. Dot top with remaining butter and sprinkle reserved cheese. Bake at 350 for 30 minutes until bubbly and browned on top. |

Ooh, noticed it was missing the minced onions. Need minced onions. I alway add a bit of hot sauce or cayenne pepper. Could also add some minced bacon too. | |

Making this on Super Bowl Sunday to go with our pulled pork sandwich's-my fam loves these.
Shredded Potatoes au Gratin
frozen hash brown potatoes, thawed-how much depends on you-I use 2 bags for our family of 7
2 cups whipping cream, 2 cups shredded cheddar cheese, green onions, S&P
Combine all ingredients and bake 450 deg. for about half hour.
I top mine with panko mixed with melted butter-not part of the recipe, but I like the crunch and love panko! | |

Sure. It's actually the best one ever:
Ore Ida potatoes, 1 lb. Velveeta, 1 c. mayo and 1/2 lb fried and crumbled bacon. It may even have butter.
Suddenly, cream of doesn't sound so bad, huh?! LOL |

My mom used to make something called "Pittsburgh Potatoes" and they were delicious!
I don't have her recipe handy, but there are several different versions on Cooks.com. Some call for cream of chicken soup, but Mom's did not. I think she used Velveeta when I was little, but there are also recipes that call for using regular cheddar cheese.
Anyway, here is a link to what I "think" her recipe was (or at least pretty close LOL).

I haven't actually made this recipe because my arteries harden just reading it. But it looks really good and comfort food-ish. And I've never seen anything like it, so maybe it could be a new dish for you too.

We have enjoyed this for special occasions for m any years now. From Cooking Light, 2001.
Potato Gratin with Goat Cheese and Garlic
1 cup half-and-half, divided
1 tablespoon all-purpose flour
1 cup (4 ounces) crumbled goat cheese
1 cup 1% low-fat milk $
1 teaspoon salt
3/4 teaspoon black pepper $
1/8 teaspoon ground nutmeg
1 garlic clove, minced
5 cups thinly sliced peeled Yukon gold potato (about 2 1/2 pounds)
Cooking spray
Preparation
Preheat oven to 400°.
Combine 2 tablespoons half-and-half with flour in a large bowl, stirring with a whisk. Add the remaining half-and-half, cheese, and next 5 ingredients (cheese through garlic), stirring with a whisk. Arrange half of the potato slices in a single layer in an 11 x 7-inch baking dish coated with cooking spray. Pour half of the milk mixture over potato slices, stirring the milk mixture immediately before adding. Repeat procedure with remaining potato slices and milk mixture. Bake at 400° for 1 hour and 10 minutes or until potatoes are tender and golden brown.

Instead of the soup, do this:
3T butter
1 clove garlic or one shallot, minced
8 0z package cream cheese
1/2-3/4 cup milk
Melt butter in saucepan and add garlic/shallot and saute for about 1 minute. Cut cold brick of cream cheese in small chunks and add to butter, whisking to melt cheese. Add milk and whisk until you get your desired consistency in the sauce. I would leave it fairly thick.
Use this in place of soup.
Incidently, I use this in any recipe that calls for the soup mix. |

I'll second Scrappower's recipe. I've been making this for years and it is really good. It can be made a day ahead and put in oven when you are ready. |

Cheesy + Potatoes are 2 words that just go together so well!!!
My cousin's wife made the cheesiest creamiest scalloped potatoes for Christmas dinner, I thought I'd died and gone to heaven!! It's such a basic recipe you can't even call it a recipe. Just sliced potatoes, garlic, cream and grated Kraft blue box cheddar cheese. The best! Although I would add bacon and maybe onion to it.
My tummy is rumbling now with all this talk about potatoes and cheese, I'm going to have to make some tonight! | |
